The ground is covered with pebbles which accumulate heat during the day and store overnight, aiding the ripening of the vines. The cultivation of the vines are overseen by Vincent Paris with great care taken to avoid any treatments and to improve the aromas and flavours of the grapes, including leaf plucking and green harvest.
